This recipe sounded so good to give for gifts. I haven't tried it yet.
Cake Balls - Delicious, bite sized dessert

Ingredients:

  • 1 box any flavor cake mix* (cook as directed on box for 13 X 9 cake)
  • 1 can ready made frosting (16 oz.)
  • 1 package chocolate candy coating or baker's chocolate - regular or white
  • wax paper

Directions:
1. After cake is baked and cooled completely, crumble into a large bowl.
2. Mix thoroughly with 1 can ready made frosting.
3. Roll mixture into 1 inch balls and lay on cookie sheet.
4. Freeze for 20 minutes.
5. Melt chocolate in microwave per directions on package.
6. Roll balls in chocolate and lay on wax paper until firm. Use a spoon to dip and roll in chocolate and then tap off extra.
7. Place on wax paper and chill again until firm.

Melt only a few pieces of chocolate bark at a time because it starts to cool and thicken. It's easier to work with when it's hot.
Makes 45-50 pieces, depending on size of balls. Using a small scoop will keep size uniform.
*Red velvet cake mix with cream cheese frosting is rich and delicious, but choose your favorites.
