| I was lucky enough to have a pretty good crop of volunteer lettuce in the garden this year, but it did not take us long to use it up. I planted my greens late so I stopped at the produce place on the highway in Milbank. I bought a big bag of lettuce, a big bag of spinach and a good size bag of asparagus for $9. It is enough for at least 5 meals for a family, a pretty good buy. Don't mistake these beautiful greens for the pallid stuff available at the grocery. After being trucked for many miles, the vitamins as well as the beauty are mostly gone from store produce. I hear through the grapevine that there is a grant for a commercial kitchen in Wilmot. If that is true, someone should consider buying or growing veggies to freeze or can for local folks to enjoy during the winter. Did you know that just about all of your frozen and canned veggies are not products of the U.S.? I was visiting yesterday with someone who told me that you cannot buy a single spear of frozen/canned asparagus that was made in the U.Us. I plan to buy double the amount and freeze them for the winter. Some people are beginning to grow veggies under hoop structures. That means our farmer's markets should be up and going earlier and going later in the future. Alas, one local type food I will not buy is sugar. Most of the sugar beets are now genetically modified, so I forgo that product in favor of organic cane sugar. The price is consistent w/that of the beet sugar. I have to buy 50 lb bags from the UNFI truck, since the only beet sugar in town is cubes. | |

| Dandelion greens were pretty tasty this year, wilted greens with a creamy bacon dressing is a wonderful supper dish with eggs and toast. The greens, bacon, milk for the dressing, eggs are all local products. The flour for the bread is from MN, the bread contains flax from a local grower. A meal such as this takes less time than waiting for your microwave to heat a processed dinner. Since I no longer have a big family at home, my cooking efforts last longer. When I bake bread there is a loaf to give away (if you give a loaf to someone, your bread tastes better;), one for the freezer, and one in the breadbox. There is also enough dough for sweet rolls, savory rolls and hamburger/hot dog buns. Those go in the freezer too. For less than an hour of actual work, there is a LOT of food. Over Christmas a couple of years ago, we had between 15-24 houseguests and then the breadbaking never stopped. But everyone pitched in and helped. | |
