 Celery Seed Cole Slaw

I made this for Thanksgiving. See the notes at the bottom of the recipe:

Celery Seed Slaw

3 pounds medium head cabbage, coarsely shredded
1/2 cup finely shredded carrot
1/2 cup chopped green pepper
1 cup sugar
1 cup white vinegar
3 tsp salt
1 tsp celery seed

In a large bowl, combine the cabbage, carrot, and green pepper. Set aside. In a small saucepan, combine the sugar, vinegar, salt, and celery seed. Bring to a boil. Pour over the cabbage mixture. Toss to coat. Cover and refrigerate for four hours or overnight. Serve with a slotted spoon. Yield: 12-16 servings.

Notes: I used three bags of the pre-shredded cabbage. If you like a 'coarse' slaw use the bagged cabbage with the carrots. The next time I make this, I am going to shred my own cabbage which will give it a finer texture. This is pretty close to Cashtown Cafe's cole slaw -- for those that remember it. I prefer this to a creamy slaw dressing.

I have allergies to the creamy slaw and this is a great alternative. Chef

I have made this recipe several more times and shredded my own cabbage. It was a bit more work, but the taste was much better. Chef
