Chef Soft and Chewy Chocolate Chip Cookies

1 1/4 cups granulated sugar
1 1/4 cups brown sugar
1 1/2 cups butter or margarine, softened
2 tsp vanilla
3 eggs
4 1/4 cups all-purpose flour
2 tsp baking soda
1/2 tsp salt
1 to 2 bags (12 oz each) semisweet chocolate chips (2-4 cups)

Heat oven to 375. In large bowl with electric mixer - beat both sugars and butter til light and fluffy. Beat in vanilla and eggs til well-blended. Beat in flour, baking soda, and salt. Stir in chocolate chips.

On ungreased cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.

Bake 8-10 mins or til light golden brown. Cool 1 minute then remove from cookie sheet to cooling rack.

This makes a large batch (6 dozen).
I used one bag of chocolate chips and one bag of butterscotch chips.

I usually put in a piece of bread in my cookie jar to keep the cookies soft - change the bread every other day. These were easy to stir together and are very good.
