| Sausage & Potato Soup 1 lb bulk pork sausage 5 cups diced uncooked potatoes (peeled) 2 medium onions, diced 1 1/2 cups to 2 cups water 1/2 tsp salt pepper to taste 1/4 tsp celery seed 3 Tbs finely chopped parsley (I used about 1 1/2 Tbs of dried parsley) 2 1/2 to 3 cups milk
Brown sausage, stirring to crumble; drain and set aside.
Combine potatoes, onion, water, salt, pepper, and celery seed in a large dutch oven. Cover and bring to a boil. Reduce heat and simmer about 10-15 mins or until potatoes are tender. Slightly mash potatoes.
Add sausage, parsley and milk. Heat well. Serves 6-8. ******
I made this last night...yum-o! The recipe originally only called for 1 1/2 cups of water, but I added more so the potatoes were covered when boiling them. I also added about 1/4 cup of potato flakes to give it some more texture and a little flavor. I grated some cheddar cheese into the soup just before serving. (If you find that your soup is too thin...add some potato flakes to thicken your soup.)
