SLOW COOKER CHEESE DIP
1lb ground beef
1/2lb bulk hot pork sausage

2lbs process American cheese, cubed

2 cans (10oz each) diced tomatoes and green chillies, undrained

Tortilla Chips

In a skillet, cook beef and sausage over medium heat until no longer pink; drain. Transfer to a 5-qt slow cooker. Add cheese and tomatoes; mix well. Cover and cook on low for 4 hours or until the cheese is melted, stirring occasionally. Serve with tortilla chips. YIELD: 3quarts

When I made this - I only used 1 lb of American Cheese and ONE can of Rotel Tomatoes, with the same amount of meat. It was a GREAT plenty! I'm not big on 'hot' things, but the Rotel Tomatoes with the chillies is just enough spice.

This holds up really well in the crock pot.
